Even if I temporarily suspend my disbelief, Is it plausible that a mere security guard or his indiscretion can change the outcome of a sensational case ,in diametrically opposite direction, overseen by some of the smartest people who had left no stones unturned to prove their case spending thousands of man days ?
That they didn't track the movements of the protagonist at the crucial moment or have not taken any measures to prevent the tampering of their precious evidence is too silly and too easy way to rig the victory for the hero.
Of course people may like the movie and enjoy it , but I find it very hard to digest.
Vip convoy route thetti odicha charithram ulla police aanu.. so let's not debate that! Shadow police vechathum, veedu bug cheythathum illegal aayathukondanu athonnum courtil present cheyyathathu. They knew it will be inadmissible. Forensic casesil samples handle cheyyunna lowest level technicians thanneyaanu best way of manipulation. And police did not think in their wildest dreams that Georgekutty will take that route with an alternate skeleton, which is understandable. They underestimated him in Drishyam 1 and even though they were much more guarded this time, they just didn't think he would go so far. Of course, it involves a great deal of luck which was acknowledged in the film. Georgekutty was prepared to go to jail if it didn't work. None of the things that happen in the movie are impossible!

But it was no longer a secret as the entire Village knew it even before GK knowing it. So it is impossible that Police didn't realize it, especially IG and ex-IG. They would be clearly observing each and every movement of GK and his vehicle and even his phone calls , if they could do it in his bedroom. With the previous experience of GK misleading police with calf's body, at least Geetha Prabhakar would have taken precautionary measures to checkmate GK from repeating same trick. If there were no shadow police with tens of hundreds of days spent or high risk electronic surveillance or highly intelligent officers and DGP involved, yes it was not impossible to switch evidence. Again I'm no expert so probably some experienced and smart Police officers can comment about how they actually do and what steps they usually take to protect the weak links in the chain, such as crucial evidence no more in their custody.
Unless the police is Delhi Police or directly controlled by Amit Shah, it is impossible that they let go of the suspect in such a casual way.

It is not "impossible". And police is not focused on GK, as it is said in the film itself that they should be focusing on his family as GK is hopeless, bugs are planted hoping to get something from rani or the kids, not GK. Tailing him on that particular day will only make him suspect the 'tiles work' in police station. Their work is secretive and is not aware of the leakage as per the film.

Exactly my thoughts... Its much like the dialogue by Colonel Hannibal Smith in 'The A-Team', 'Give me a minute, I'm good. If I've got an hour, I'm great. You give me six months, I'm unbeatable!!!'
